Prep oysters
Place the shucked oysters in a colander and let them drain for 10–15 minutes. Pat them very gently with paper towels to remove excess surface moisture but avoid pressing out the juices.

Make dry mix
In a shallow wide bowl or baking dish, whisk together the all-purpose flour, cornmeal, cornstarch, baking powder, kosher salt, black pepper, smoked paprika, and cayenne until uniformly combined. This will be the primary coating that provides crispness.

Make wet batter
In another shallow bowl, whisk the buttermilk, eggs, and hot sauce until smooth and slightly frothy. Taste and adjust hot sauce to preference. Keep the wet mix chilled until ready to dredge.

Heat oil
Pour vegetable oil into a heavy, deep pot or deep-fryer to a depth of 2.5–3 inches (about 1 L). Heat the oil over medium-high heat until it reaches 350°F (175°C). If you don't have a thermometer, test by dropping a pinch of the flour mix into the oil — it should sizzle and rise steadily without burning.

Dredge oysters
Working in small batches (6–8 oysters at a time), dredge each drained oyster first in the dry mix, shaking off excess, then dip into the buttermilk-egg batter, letting excess drip back into the bowl, and finally return to the dry mix for a final coat. Press the oysters gently into the dry mix on the last dredge so the coating adheres well. Place coated oysters on a wire rack set over a sheet tray while you finish the rest.

Fry oysters
When the oil is at 350°F (175°C), carefully lower a few coated oysters into the oil using a slotted spoon or spider. Do not overcrowd the pot — maintain batches of 6–8 depending on pot size. Fry, turning gently if needed, until golden brown and crisp, about 2.5–3.5 minutes per batch. Internal temperature should be hot and edges crisp; oysters will firm slightly as they cook.

Drain and rest
Remove fried oysters with a slotted spoon and transfer to a rack set over a sheet tray lined with paper towels to drain excess oil. Immediately season lightly with a pinch of kosher salt while still hot. Allow to rest 1–2 minutes to set the crust before serving.

Keep warm (optional)
If cooking multiple batches, preheat an oven to 200°F (95°C) and place cooked oysters on an oven-proof rack to keep warm and crisp while you finish frying the remaining batches. Do not pile them; keep a single layer for best texture.

Assemble baskets
Line small fry baskets or serving plates with parchment or paper. Arrange a bed of optional pickles or coleslaw, then place 6 fried oysters per basket. Garnish with chopped parsley and a lemon wedge. Serve immediately with your choice of tartar sauce, remoulade, or cocktail sauce.
