Prepare claws
Rinse the blue crab claws under cold water and pat them dry thoroughly with paper towels. If claws are very large or have cracked shells, lightly score the shell where meat is exposed so heat penetrates evenly. Set aside chilled until ready to batter.

Heat oil
Pour oil into a heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (enough to fully submerge the claws). Heat to 350°F (175°C). Use a thermometer to maintain consistent temperature during frying.

Make batter
In a medium bowl, whisk together the all-purpose flour, cornstarch, baking powder, kosher salt, black pepper, and garlic powder until evenly combined. If using an egg, beat it lightly in a small bowl and whisk into the dry mix. Gradually stir in cold club soda (or sparkling water) until a smooth batter forms — it should be the consistency of heavy cream or light pancake batter, thick enough to coat but still runny. Keep the batter cold (set bowl in a larger bowl of ice if necessary) to ensure a crisp fry.

Optional breadcrumb finish
If you want an extra-crispy exterior, place the breadcrumbs or panko in a shallow bowl. After dipping a claw in batter, briefly dredge it in the breadcrumbs to lightly coat, then shake off excess. This step is optional — the batter alone yields a light, crisp shell.

Fry claws
Working in small batches (3–5 claws depending on pot size), dip each dried crab claw into the batter to coat completely (and optionally press into breadcrumbs). Carefully lower into the hot oil with tongs or a spider and fry for 2½–4 minutes, until the batter is golden and crisp and the interior reaches 145°F and the meat is heated through. Avoid overcrowding to maintain oil temperature. Adjust heat as needed to keep oil around 325–350°F.

Drain and season
Use a slotted spoon or spider to remove the claws and transfer to a wire rack set over a baking sheet or to paper towels to drain. Immediately season with a light pinch of kosher salt if desired. Keep fried claws warm in a low oven (200°F / 95°C) while you finish remaining batches.

Finish and serve
Arrange the crab claws on a serving platter. Sprinkle with chopped chives or parsley for color and serve with lemon wedges alongside the Fiddler's dipping sauce. Serve hot so the batter remains crisp.

In a small bowl, combine the mayonnaise and Greek yogurt (or sour cream) until smooth. Stir in the prepared horseradish, Dijon mustard, hot sauce, Worcestershire sauce, and fresh lemon juice until thoroughly combined.

Add the chopped parsley, smoked paprika, salt, and black pepper. Taste and adjust seasoning: add an extra 1/2 tsp lemon juice for brightness, more horseradish for heat, or a pinch of sugar if you'd like a touch of balance.

Cover and chill in the refrigerator for at least 15–20 minutes to let flavors marry. Bring to cool room temperature for 5–10 minutes before serving with the warm crab claws.
