Deviled Crab Filling

    Prepare aromatics

    In a medium skillet over medium heat, melt 2 tablespoons unsalted butter. Add the finely diced yellow onion and celery and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add the minced garlic and sliced green onion and cook 30 seconds until fragrant. Remove from heat and let cool 3–4 minutes.

    Combine filling

    In a large bowl, gently flake the lump crabmeat with a fork, taking care to remove any cartilage shells. Add the cooled aromatics to the crab. Stir in 1/2 cup mayonnaise, 1 beaten egg, 1/2 cup ground breadcrumbs, 1 teaspoon Dijon mustard, 1 teaspoon Worcestershire sauce, 1/2 teaspoon hot sauce, 1 teaspoon Old Bay seasoning, 1/2 teaspoon smoked paprika, 1/2 teaspoon Kosher salt, 1/4 teaspoon black pepper, and 1 tablespoon chopped parsley. Mix gently until evenly combined — do not overwork or the crab will become mushy. Taste and adjust seasoning (more hot sauce or Old Bay if desired).

    Chill

    Cover the bowl and refrigerate the crab mixture for at least 20–30 minutes to firm up, which makes shaping easier.

Forming & Coating

    When chilled, scoop heaping tablespoons of the crab mixture and form into 18–20 bite-sized rounds or slightly flattened patties (about 1–1.25 inch diameter). Place them on a parchment-lined tray.

    Set up a dredging station: one shallow bowl with 1/2 cup flour, one with 1 beaten egg, and one with 1 cup breadcrumbs or panko. Lightly dust each crab bite in flour, shake off excess, dip into beaten egg, then press into breadcrumbs to coat all sides. For a crisper crust, press additional breadcrumbs onto the surface.

Frying

    In a heavy skillet or sauté pan, add about 1 cup vegetable oil (enough for a shallow fry, roughly 1/4-inch depth) and heat over medium until oil reaches 350°F (175°C) or a test breadcrumb sizzles and browns in about 30–40 seconds. Work in batches to avoid crowding (4–6 bites per batch depending on pan size).

    Fry crab bites 2–3 minutes per side, turning once, until golden brown and heated through. Use a slotted spatula to transfer cooked bites to a wire rack set over a baking sheet or paper towel-lined plate to drain. Keep warm in a 200°F (95°C) oven while finishing remaining batches.

Remoulade Sauce

    While crab bites fry, make the remoulade: in a small bowl combine 1/2 cup mayonnaise, 1 teaspoon Creole or Dijon mustard, 1/2 teaspoon prepared horseradish (if using), 1 teaspoon lemon juice, 1 teaspoon minced capers, 1 teaspoon finely diced cornichon or dill pickle, 1/4 teaspoon hot sauce, 1/4 teaspoon paprika, 1/4 teaspoon salt, and 1/8 teaspoon black pepper. Whisk until smooth and chill briefly. Taste and adjust acidity or heat as desired.

Serve

    Arrange crab bites on a platter with the remoulade in a small bowl or ramekin. Garnish with chopped parsley and lemon wedges. Serve immediately while warm.
