Chill glass

Place a highball or Collins glass in the freezer for 5 minutes or fill with ice water while you prepare the drink to ensure a cold serving vessel.

Prepare tea

If you haven't already, brew the Steeping Room Apple-Papaya tea: steep one tea bag in 6–8 oz near-boiling water for 4 minutes, then cool to room temperature and refrigerate. For this recipe use 2 oz of chilled tea. (Alternatively use pre-brewed cold tea.)

Build the drink

Discard the ice water from the chilled glass (if used) and fill the glass with fresh cubed ice until nearly full (about 1 cup). Add 1 tbs Tenneyson Black Ginger non-alcoholic spirit, 0.5 oz fresh lemon juice, and 2 oz chilled apple-papaya tea to the glass. If you prefer sweeter, add up to 0.5 tsp simple syrup.

Top with tonic

Gently pour 3 oz chilled tonic water over the back of a spoon onto the drink to maintain some carbonation and layering. Give the drink a very gentle stir (1–2 slow turns) to integrate the components without flattening the tonic.

Garnish & Finish

Garnish the drink with a lemon wheel or twist hooked on the glass rim and a thin apple slice floated on top. Optionally slide a thin fresh ginger slice behind the lemon for extra aromatic ginger presence. Serve immediately with a straw or swizzle.
