Boil water
Bring 2 cups of water to a rolling boil in a kettle or small saucepan.

Steep tea
Place 6 tea bags in a heatproof measuring cup or bowl. Pour the 2 cups of boiling water over the tea bags. Let steep 4–6 minutes depending on desired strength (5 minutes yields a balanced, unsweet iced tea).

Remove tea bags
Using a spoon or tongs, remove the tea bags. Gently press each bag against the side of the cup to extract the last bit of flavor, then discard the bags.

Dilute with cold water
Pour the steeped tea concentrate into an 8-cup (2 quart) pitcher. Add 6 cups of cold water and stir to combine. This dilutes the concentrate to the proper strength for iced tea.

If serving immediately, proceed to the next section and serve over ice. For clearer, less bitter iced tea, refrigerate the pitcher until well chilled (30–60 minutes).
