    Preheat oven and skillet

    Position a rack in the center of the oven and preheat to 425°F (220°C). Place a 9-inch cast-iron skillet (or an oven-safe 8–9 inch pan) in the oven while it heats so the pan becomes very hot, about 8–10 minutes.

    Prepare dry ingredients

    While the oven and skillet heat, whisk together the cornmeal, all-purpose flour, granulated sugar, baking powder, baking soda, and salt in a large mixing bowl until evenly combined and no lumps remain.

    Mix wet ingredients

    In a separate bowl, whisk the buttermilk and eggs until blended. Whisk in the melted butter until incorporated. If using honey, whisk it into the wet mixture now.

    Combine batter

    Pour the wet mixture into the bowl with the dry ingredients. Stir with a spatula or wooden spoon just until combined — a few small lumps are fine. Do not overmix; overworking will make the cornbread tough.

    Prepare the hot skillet

    Carefully remove the preheated skillet from the oven using oven mitts. Add the tablespoon of vegetable oil and tilt the skillet to coat the bottom and sides. The oil should shimmer but not smoke. (If your skillet is well seasoned you can omit or use less oil.)

    Bake

    Pour the batter into the hot, oiled skillet — it should sizzle on contact. Smooth the top with a spatula. Return the skillet to the oven and bake for 20–25 minutes, until the top is golden brown and a toothpick inserted in the center comes out clean or with a few moist crumbs.

    Cool and serve

    Remove the skillet from the oven and let the cornbread rest for about 8–10 minutes. Run a butter knife around the edge to loosen if needed, then slice into wedges. Serve warm with the optional 2 tbs unsalted butter for spreading.

    Notes and optional tweaks

    If you like a bit of texture, fold 1/2 to 3/4 cup canned sweet corn or 1/2 cup diced jalapeño (seeded) into the batter before pouring into the skillet. For a slightly sweeter, softer loaf, increase sugar to 3 tbs or add the optional honey as directed above.
