Prep & Seasoning

    Pat and season

    Pat the chicken thighs dry with paper towels. In a small bowl combine 1.5 tsp salt, 1 tsp black pepper, 1 tsp smoked paprika and 1 tsp garlic powder. Sprinkle and rub this seasoning evenly over all sides of the chicken pieces.

    Set up a dredge station: Pour 1.5 cups all-purpose flour into a shallow dish. Lightly coat each seasoned thigh in the flour, shaking off excess; place on a tray while you heat the pan. Reserve any extra flour for thickening the gravy if needed.

Dredge & Fry Chicken

    Heat the pan

    Use a heavy skillet (cast-iron preferred). Add 0.75 cups vegetable oil and 2 tbs butter and heat over medium-high until shimmering and the butter has melted. The pan should be hot but not smoking (about 350°F / 175°C if using a thermometer).

    Brown the chicken

    Working in batches if necessary so you don’t crowd the pan, add the dredged thighs skin-side down. Cook until deep golden brown, about 6–8 minutes, then flip and brown the other side 5–7 minutes. The goal is a good crust; the chicken will finish cooking in the gravy. Transfer browned pieces to a plate and reserve any pan drippings in the skillet.

Make the Gravy

    Sauté aromatics

    With the skillet over medium heat (use the pan drippings left from browning), add the sliced onion (1 cup). Sauté, stirring occasionally, until softened and lightly caramelized, about 6–8 minutes. Add the minced garlic (2 tsp) and cook 30–45 seconds until fragrant.

    Deglaze

    Pour in 2 cups chicken broth and 1 tbs Worcestershire sauce, scraping the brown bits from the bottom of the pan with a wooden spoon. Bring to a gentle simmer.

    Thicken the gravy

    Whisk 2 tbs flour into a small bowl with 3–4 tbs of the hot broth from the pan to make a smooth slurry (or sprinkle the 2 tbs flour directly into the pan and whisk quickly). Slowly whisk the slurry back into the simmering broth to avoid lumps. Simmer until the gravy thickens, about 3–5 minutes. If gravy is too thin, simmer a few minutes longer; if too thick, add up to 1/2 cup additional broth.

    Season the gravy

    Stir in 1 tsp dried thyme, 1 bay leaf, 0.25 tsp sugar (optional), 0.5 tsp salt and 0.25 tsp black pepper. Taste and adjust seasoning as needed. Keep the gravy at a gentle simmer.

Finish & Serve

    Simmer the chicken in gravy

    Return the browned chicken thighs to the skillet, skin-side up, nestling them into the gravy so they are partially submerged. Reduce heat to low, cover the skillet, and simmer gently for 20–25 minutes until the internal temperature of the thickest part of the thighs reaches 165°F (74°C) and juices run clear.

    Uncover for the last 5 minutes if you want the skin to soften slightly while the gravy reduces; if you prefer crispier skin, transfer chicken to a preheated 400°F (200°C) oven for 6–8 minutes after simmering, then spoon hot gravy over it.

    Remove the bay leaf. Taste the gravy and adjust salt and pepper as needed. If gravy has lumps, strain quickly through a fine sieve into a clean saucepan and reheat gently.

    Serve: Spoon cooked rice or mashed potatoes onto plates, place 1–2 thighs over each serving and ladle plenty of onion gravy on top. Garnish with 2 tbs chopped fresh parsley.

    Leftovers: Cool and refrigerate within 2 hours. Reheat gently on the stovetop over low heat, adding a splash of broth if gravy has thickened.
