Green Beans & Blanching

    Trim and ready beans

    Rinse the green beans, trim off the stem ends and remove any long strings. Pat dry. Aim for uniform lengths so they cook evenly (leave whole or halve for shorter pieces).

    Bring water to a boil

    In a large pot, bring 2 L of water to a rolling boil. Add 1 tbsp kosher salt to the boiling water (this seasons the beans and helps preserve color).

    Blanch

    Add the trimmed green beans to the boiling water and cook until bright green and just tender-crisp, about 3–4 minutes for large beans (test one: it should pierce with slight resistance).

    Shock

    Immediately transfer the beans to an ice-water bath (bowl of ice water) to stop cooking. Leave in the ice bath 2–3 minutes until fully cooled, then drain and pat dry with a clean towel or spin in a salad spinner.

    Toast the almonds

    In a large skillet over medium heat, add the 0.33 cup sliced almonds (no oil). Stir constantly until they become fragrant and lightly golden, 2–3 minutes. Transfer almonds to a small bowl to stop further cooking.

    Heat fat and sweat shallot

    Wipe the skillet clean if needed. Add 1 tbsp olive oil and 2 tbsp unsalted butter to the skillet and warm over medium heat until the butter melts and begins to foam. Add the finely chopped shallot and cook, stirring, until softened and translucent, about 2 minutes.

    Add garlic and seasonings

    Add the minced garlic and 1/4 tsp crushed red pepper flakes to the skillet. Sauté, stirring constantly, until the garlic is fragrant but not browned, about 30–45 seconds.

    Sauté the blanched beans

    Add the drained, blanched green beans to the skillet. Toss to coat with butter and oil and sauté for 3–4 minutes over medium-high heat, stirring frequently, until the beans are heated through and develop a bit of color at the contact points but remain crisp-tender.

Finish & Serve

    Season and finish

    Remove the skillet from heat. Zest the large lemon over the beans (about 1 tsp zest) then cut the lemon in half and squeeze about 1 tbsp fresh lemon juice over the beans (adjust to taste). Sprinkle 1/2 tsp kosher salt and 1/2 tsp freshly ground black pepper over the beans and toss to combine. Taste and adjust salt, pepper, or lemon as desired.

    Add almonds and serve

    Sprinkle the toasted sliced almonds over the green beans and give a final gentle toss. Transfer to a serving dish and, if desired, finish with an extra small drizzle (about 1 tsp) of olive oil or a few additional lemon drops. Serve immediately while warm.
