Prepare Simple Syrup

Make syrup
Combine 100 g granulated sugar and 120 ml water in a small saucepan. Heat over medium, stirring until the sugar fully dissolves and the liquid is clear. Do not boil vigorously; a gentle simmer for 2–3 minutes is enough. Remove from heat and let cool to room temperature (about 15–20 minutes).
Make Flavor Concentrate

Citrus juice concentrate
If using citrus (lemon, lime, orange), strain the fresh juices through a fine mesh to remove pulp and seeds. Combine the chosen juices (total about 60–90 ml depending on flavor) with the cooled simple syrup in a bowl and mix well.

Berry or ginger concentrate
If using mashed berries: macerate 120 g berries with 30–45 ml of the simple syrup, mash thoroughly, then strain through a fine mesh, pressing to extract maximum juice; discard solids. If using ginger: combine sliced ginger with 60 ml of the simple syrup and let steep for 20–30 minutes, then strain out the ginger. For vanilla: stir 1 tsp vanilla extract directly into the simple syrup.

Adjust acidity
Add up to 1 tsp citric acid (or a squeeze more citrus juice) and a pinch of salt to the syrup-flavor mixture to brighten the flavor. Taste and adjust: it should be a concentrated, slightly sweeter-than-soda syrup.
Carbonate and Bottle

Chill the carbonated water well (cold water holds carbonation better). Pour 1 liter of carbonated water into the clean 1-liter bottle, leaving about 4–6 cm (1.5–2.5 in) headspace. Alternatively, use two 500 ml bottles and divide equally.

Add the flavor-syrup concentrate to the carbonated water. Use roughly 80–120 ml of the concentrate per liter depending on desired sweetness and intensity (start with 80 ml, taste through a straw if possible, and add more). Pour gently down the side of the bottle to preserve carbonation.

Cap the bottle tightly and invert once or twice gently to mix. Avoid shaking vigorously to prevent loss of fizz or over-pressurization. Taste a small sample by opening briefly; if flavor is too weak, add a little more concentrate and re-cap quickly.
Serve

Serve the bottled soda over ice in a glass and garnish with mint sprigs or citrus slices. Keep any unused soda chilled and consume within 3–4 days for best carbonation and flavor.

Notes on safety: do not ferment or leave sweetened bottled soda at warm temperatures or sealed for long periods to avoid pressure build-up. If bottles become overly pressurized (bulging or hissing when opening), vent carefully over a sink.
