Prepare garlic and marinade
Peel and mince the garlic cloves (or press through a garlic press). In a medium bowl combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt and black pepper. Whisk until incorporated.

Marinate chicken
Pat the chicken thighs dry with paper towels. Place them in a large bowl or resealable plastic bag. Pour 3/4 of the marinade over the chicken, reserving the remainder for the vegetables. Massage the marinade into the chicken so it coats evenly. Let the chicken marinate at room temperature for 20–30 minutes or refrigerate for up to 4 hours. If refrigerating, bring to room temperature for 20 minutes before baking.

Preheat oven and prepare vegetables
Preheat the oven to 425°F (220°C). In a large bowl, combine the halved potatoes, baby carrots, and sliced onion. Add the reserved marinade and 1/2 cup broth (or water). Toss to coat evenly. Spread the vegetables in a single layer on the bottom of a large baking dish or rimmed sheet pan.

Arrange chicken and roast
Nestle the marinated chicken thighs, skin-side up, among the vegetables in the baking dish, spacing them slightly apart so air circulates. Pour any accumulated chicken juices into the dish. Roast in the preheated oven for 35–45 minutes, until the vegetables are tender and an instant-read thermometer inserted into the thickest part of a thigh (without touching bone) reads 165°F (74°C). If the chicken skin is not sufficiently browned, broil for 2–3 minutes while watching carefully to avoid burning.

Rest and finish
Remove the dish from the oven and transfer the chicken to a cutting board or platter. Let rest for 5–10 minutes. Stir the vegetables in the pan to coat them in the pan juices. Taste and adjust seasoning with a pinch of salt and pepper if needed. Sprinkle chopped fresh parsley over the chicken and vegetables before serving, if using.
