Method

Cranberry-fennel relish

    Cook cranberries

    In a small saucepan, combine cranberries, granulated sugar, and water. Bring to a simmer over medium heat, stirring occasionally.

    Cook until cranberries begin to burst and the mixture thickens slightly, about 8–10 minutes. Mash a few berries with the back of a spoon for a jammy texture but leave some whole for bite.

    Remove from heat and let cool 5 minutes. Stir in finely chopped fennel, minced shallot, balsamic vinegar, lemon juice, orange zest, thyme (if using), salt and pepper. Taste and adjust seasoning — the relish should be bright, slightly sweet-tart and crunchy from fennel.

    Transfer to a bowl and chill at least 15 minutes while you prepare the toast and glaze so flavors meld.

Balsamic glaze (finish)

    In a small saucepan, bring 1/4 cup balsamic vinegar and 1 tsp brown sugar (optional) to a gentle simmer over low heat.

    Reduce until slightly thickened and syrupy, about 6–8 minutes. Watch carefully so it does not burn. Remove from heat and let cool; it will continue to thicken as it cools.

Grilled toast

    Slice the baguette or sourdough into 1/2-inch to 3/4-inch slices. Brush each side lightly with melted butter or olive oil.

    Preheat a grill pan or skillet over medium-high heat (or preheat an outdoor grill). Place slices on the hot surface and grill until golden and charred in spots, about 1–2 minutes per side. Alternatively, toast under a broiler 1–2 minutes per side.

    If using, rub the warm toasts with the cut side of the garlic clove for a subtle garlic note.

Burrata & plating

    Place two warmed burrata balls in the center of a serving plate or on individual plates. Drizzle each burrata with about 1 tbs extra-virgin olive oil and sprinkle with a pinch of coarse sea salt and freshly ground black pepper.

    Spoon generous tablespoons of the chilled cranberry-fennel relish alongside and slightly over the torn edge of the burrata so the creamy interior mixes with the relish. Distribute remaining relish around the plate.

    Arrange grilled toasts next to the burrata. Scatter microgreens or basil over the top for freshness.

    Finish by drizzling balsamic glaze in a thin stream across the burrata and relish (about 1–2 tbs total) and a final small drizzle of olive oil if desired.

    Serve immediately so the burrata is soft and the toasts stay crisp. Provide extra toasted bread for spreading.
