Cocktail

Method

Cocktail

  1. 1

    Prepare honey syrup

If you do not have honey syrup ready, combine equal parts honey and hot water (by volume), stir until fully blended, then cool to room temperature. This recipe uses 0.5 oz of honey syrup.

  2. 2

    Combine ingredients

In a cocktail shaker, add the Rum Blend #1 (2 oz), Agricole Rhum (0.5 oz), Falernum (0.5 oz), Allspice dram (0.25 oz), honey syrup (0.5 oz), fresh lime juice (0.75 oz), fresh orange juice (0.5 oz) and 3 dashes of Angostura bitters.

  3. 3

    Dry shake (optional)

If you prefer a slightly frothy texture, dry shake (no ice) the mixture vigorously for 10–12 seconds to help emulsify juices and honey syrup.

  4. 4

    Shake with ice

Add crushed ice (about 1 cup) to the shaker, then shake vigorously for 12–15 seconds until well chilled and slightly diluted.

  5. 5

    Serve

Strain the cocktail into a chilled double old-fashioned glass or tiki mug packed with fresh crushed ice.

Garnish

  1. 6

Express the oils from an orange peel over the surface of the drink by holding the peel skin-side down above the cocktail and giving it a firm squeeze, then run the peel around the glass rim and drop it into the drink.

  2. 7

Optional: Skewer a maraschino cherry and a small toasted cinnamon stick (or place a whole star anise) and rest it on the crushed ice as a nod to the original tiki presentation.

  3. 8

Finish with a light spray of Angostura bitters on the foam or top of the drink if desired (1 additional dash), and serve with a short straw.
