Prepare Oysters & Topping
Shuck and clean oysters
If oysters aren't already shucked, rinse shells under cold water and scrub. Hold the oyster with a towel cupped around the hinge. Insert an oyster knife into the hinge, twist to pop the shell, slide the knife along the top shell to cut the muscle and remove the top shell. Run the knife under the oyster to free it from the bottom shell, keeping the oyster liquor in the shell. Place oysters on a tray over a bed of rock salt or crumpled foil to stabilize them.
Prepare garlic-parsley butter
In a small saucepan over low heat, melt the unsalted butter with the neutral oil (or melted clarified butter) until shimmering. Add the minced garlic and minced shallot and cook gently for 30–45 seconds — just until fragrant and softened but not browned. Remove from heat and stir in the lemon juice, Worcestershire sauce, hot sauce (if using), chopped parsley, and a pinch of salt and pepper. Taste and adjust seasoning.
Combine crab with butter
In a small bowl, gently fold the lump crab meat into about 2 tablespoons of the warm garlic-parsley butter to coat the crab lightly. Reserve the remaining butter for topping the oysters.
Assemble & Grill
Preheat your grill to medium-high (about 400–450°F / 200–230°C). If using an oven/broiler, preheat the broiler and position the rack about 4–6 inches from the heat source.
Sprinkle about 1/2 teaspoon of grated aged Parmesan over each oyster to create a savory crust as it melts.
Grill the oysters for 4–6 minutes with the lid closed (or broil 3–5 minutes) until the edges of the oysters begin to curl slightly, the topping is bubbly, and the cheese is lightly golden. Watch closely to avoid overcooking.
If you want a deeper browned crust, move the oysters briefly (30–60 seconds) directly under the broiler or over the hottest part of the grill.
