Prepare glass
Fill a highball or Collins glass with ice to chill while you mix the cocktail.

Mix base
In a cocktail shaker (or mixing glass) add the tequila, black currant liqueur, fresh lime juice, and optional simple syrup. Add a couple of large ice cubes, then shake vigorously for about 10–12 seconds until well chilled and slightly diluted.

Assemble
Discard the ice from the chilled serving glass if desired, then fill the glass with fresh ice. Strain the shaken mixture into the glass over the ice.

Top with ginger beer
Slowly top the drink with ginger beer (about 4 oz) to preserve carbonation, gently stir once with a bar spoon to combine the layers.

Garnish and finish
Garnish with a lime wedge or wheel on the rim and drop in a few fresh black currants or blackberries if using. Serve with a straw or stirrer.

Taste and adjust: if the cocktail is too tart, add an extra 0.25 oz simple syrup and gently stir to incorporate.
