Herbed Scrambled Eggs

    Fold in the chopped chives and parsley; set the mixture aside while you heat the pan.

    Heat a nonstick skillet over medium-low heat. Add 2 tablespoons unsalted butter and let it melt and foam but not brown (about 1 minute). Reduce heat to low.

    Pour the egg mixture into the skillet. Allow it to sit undisturbed for 10–15 seconds until edges just begin to set. Using a silicone spatula, scrape the eggs from the edges toward the center, forming large soft curds. Continue gently folding and pushing the eggs every 10–15 seconds. Maintain low heat — the eggs should never sizzle aggressively.
