Pork Chop Preparation

    Season the Pork Chops

    Rub the Berkshire pork chops with olive oil, salt, black pepper, garlic powder, and fresh thyme. Ensure the seasoning is evenly distributed on both sides.

    Sear the Pork Chops

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned pork chops. Sear for about 4-5 minutes on each side or until a golden brown crust forms. The internal temperature should reach 145°F (63°C). Once done, remove from skillet and let rest.

    Prepare the Hot Cherry Peppers

    In the same skillet used for the pork chops, add 1 tablespoon of olive oil and the minced garlic. Sauté for about 1 minute until fragrant.

    Add the Hot Cherry Peppers

    Add the hot cherry peppers and red wine vinegar to the skillet. Cook for about 3-4 minutes until the peppers are heated through and slightly softened. Stir occasionally.

Grilled Peppers Preparation

    While the pork chops rest, preheat a grill or grill pan over medium-high heat. Slice the bell peppers into strips.

    Toss the sliced bell peppers with olive oil, salt, and black pepper. Grill for about 5-7 minutes, turning occasionally, until they are tender and have nice grill marks.

Serving

    Plate the Dish

    On a serving plate, place the seared pork chop. Top with sautéed hot cherry peppers and arrange the grilled peppers around the pork chop. Serve immediately.
