In a mixing bowl, combine the all-purpose flour and salt. Gradually add water and olive oil, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Divide the dough into 4 equal portions. Roll each portion into a thin circle, about 1/8 inch thick. Heat a skillet over medium heat. Cook each piadina for about 2 minutes on each side until lightly browned and cooked through. Keep warm.
