Pasta Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack in the eggs. Using a fork, gently beat the eggs, gradually incorporating the flour from the edges until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for at least 30 minutes.

    Roll the Pasta

    After resting, divide the dough into four pieces. Using a pasta machine or a rolling pin, roll out each piece to your desired thickness. Cut into your preferred pasta shape (tagliatelle, fettuccine, etc.).

Bolognese Sauce Preparation

    Sauté the Vegetables

    In a large pot or skillet, heat olive oil over medium heat. Add the diced carrots, celery, and chopped onion. Sauté for about 5-7 minutes until softened.

    Brown the Meat

    Add the ground beef to the pot and cook until browned, stirring frequently, about 5-6 minutes.

    Add Garlic and Wine

    Stir in the minced garlic and cook for another minute. Pour in the red wine, scraping any browned bits from the bottom of the pot, and let it simmer for about 5 minutes until slightly reduced.

    Add Tomatoes and Herbs

    Stir in the crushed San Marzano tomatoes, chopped basil, oregano, salt, and black pepper. Bring to a simmer, then reduce heat to low and let cook for at least 30 minutes, stirring occasionally.

    Finish with Cream

    Once the sauce has thickened, stir in the fresh cream and let it cook for an additional 5 minutes, adjusting seasoning if needed.

Assembly

    Cook the Pasta

    In a large pot of salted boiling water, cook the fresh pasta for 2-4 minutes until al dente. Drain and reserve some pasta water.

    Combine Pasta and Sauce

    Toss the cooked pasta with the Bolognese sauce, adding reserved pasta water as needed to achieve desired consistency.

    Serve

    Plate the pasta and sauce, garnishing with extra chopped basil and freshly grated Parmesan cheese if desired.
