Pasta Preparation

    Cook Orecchiette

    In a large pot of salted boiling water, add the orecchiette pasta. Cook according to package instructions until al dente, usually about 9-10 minutes. Reserve 1 cup of pasta water and drain the pasta.

Sausage Preparation

    Make Housemade Sausage

    In a bowl, combine ground pork, fennel seeds, red pepper flakes, minced garlic, and salt. Mix well with your hands until all ingredients are incorporated. Form into small patties or crumbles.

Vegetable Preparation

    Sauté Broccoli Rabe

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped broccoli rabe and sauté for about 3-4 minutes until tender but still bright green. Remove from skillet and set aside.

Sauce Preparation

    Prepare Arrabiata Sauce

    In the same skillet, add 2 tablespoons of olive oil and heat over medium. Add minced garlic and crushed red pepper flakes, sautéing for about 1 minute until fragrant. Pour in the canned crushed tomatoes, add salt, and stir to combine. Simmer for 10 minutes until slightly thickened. Stir in fresh basil.

Combine and Serve

    Combine Ingredients

    Add the cooked orecchiette and sautéed broccoli rabe to the arrabiata sauce. If necessary, add reserved pasta water to achieve desired consistency. Toss to coat the pasta evenly.

    Plate the pasta, top with crumbled or sliced housemade sausage, and generously sprinkle with grated Pecorino Romano cheese before serving.
