Method

Preparing the Salad

  1. 1

    Prepare the Romaine Lettuce

Wash the romaine lettuce thoroughly under cold water. Shake off excess water and chop into bite-sized pieces.

  2. 2

    Slice the Cucumber

Peel the cucumber if desired, and slice it into thin rounds. If the cucumber is large, you can halve it lengthwise before slicing.

  3. 3

    Grate the Carrot

Peel the carrot and use a grater to shred it into thin strips.

  4. 4

    Chop the Red Onion

Peel the red onion, cut it in half, and slice it thinly. If the flavor is too strong, you can soak the slices in cold water for a few minutes and then drain.

Making the Vinaigrette

  1. 5

    Combine Ingredients

In a small bowl or a jar with a lid, combine the red wine vinegar, olive oil, Dijon mustard, honey, salt, and black pepper.

  2. 6

    Mix the Vinaigrette

Whisk the ingredients together with a fork or shake the jar vigorously until well combined and emulsified.

Assembling the Salad

  1. 7

    Combine Salad Ingredients

In a large salad bowl, combine the chopped romaine lettuce, sliced cucumber, grated carrot, and sliced red onion.

  2. 8

    Add Toppings

Top the salad with croutons and sprinkle the grated parmesan cheese evenly over the salad.

  3. 9

    Dress the Salad

Drizzle the prepared red wine vinaigrette over the salad just before serving. Toss gently to combine all ingredients.
