Dough Preparation

    Activate Yeast

    In a small bowl, combine the warm water, sugar, and active dry yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

    Make Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Create a well in the center and add the activated yeast mixture and olive oil. Mix until a dough begins to form.

    Knead Dough

    Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

    Let Dough Rise

    Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm area for about 1 hour or until it has doubled in size.

Toppings Preparation

    Prepare Broccoli Rabe

    Bring a pot of salted water to a boil. Add the broccoli rabe and blanch for about 2-3 minutes. Drain and immediately transfer to an ice bath to stop the cooking process. Once cooled, chop into smaller pieces.

    Roast Mushrooms

    Preheat your oven to 400°F (200°C). Clean and slice the mushrooms. Toss them with olive oil, salt, and black pepper. Spread them on a baking sheet and roast for about 20 minutes, or until golden brown.

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.

Assembling and Baking

    Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

    Form Pizza Base

    Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a parchment-lined baking sheet or a preheated pizza stone.

    Spread the sautéed garlic evenly over the dough. Layer with roasted mushrooms, blanched broccoli rabe, and mozzarella cheese. Sprinkle grated Parmesan cheese on top.

    Carefully place the pizza in the preheated oven. Bake for about 12-15 minutes or until the crust is golden brown and the cheese is bubbling.
