Fried Calamari

Prepare the Calamari
Rinse the cleaned calamari under cold water and pat dry with paper towels. This step ensures that there is no excess moisture, which can cause the oil to splatter during frying.

Set Up the Breading Station
In a shallow bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and garlic powder. In another bowl, beat the eggs. If using, place breadcrumbs in a third bowl.

Bread the Calamari
Dip each calamari ring first in the flour mixture, then in the beaten eggs, and finally coat with breadcrumbs (if using). Place the breaded calamari on a plate and set aside.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small piece of bread into it; it should sizzle and brown quickly.

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown. Use a slotted spoon to remove the calamari and transfer them to a plate lined with paper towels to drain excess oil.

Make the Sauce
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the saucepan. Stir to combine and let it simmer for about 10-15 minutes, allowing the flavors to meld. If using, stir in the fresh basil just before serving.

Serve the fried calamari hot, garnished with lemon wedges. Accompany with the marinara sauce for dipping.
