Pizza Dough Preparation

Activate Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix Ingredients
In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Stir until a dough begins to form.

Knead Dough
Transfer the dough onto a floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Preheat Oven
Preheat your wood-fired oven to about 700°F (370°C). If using a conventional oven, preheat to the highest setting.

Shape Dough
Once the dough has risen, punch it down and divide it into two equal portions. On a floured surface, stretch each portion into a round pizza shape.

Add Sauce and Toppings
Spread tomato sauce evenly on each pizza base. Sprinkle shredded mozzarella cheese, then add pepperoni slices and bell peppers. Finish with fresh basil leaves.

Drizzle with Olive Oil
Lightly drizzle olive oil on top of the assembled pizzas for added flavor.

Bake Pizza
Carefully place the pizzas in the preheated wood-fired oven (or on a pizza stone in a conventional oven) and bake for about 5-8 minutes, until the crust is golden and the cheese is bubbly.

Remove the pizzas from the oven, let them cool for a minute, cut into slices, and serve family-style!
