Bake the Chicken
Place the baking sheet with the chicken in the preheated oven and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

Cook the Quinoa
In a medium saucepan, bring the vegetable broth to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

Prepare the Asparagus
While the quinoa is cooking, wash the asparagus and trim the ends. Toss with olive oil, salt, and pepper, and roast in the oven for 10-12 minutes until tender.
- 7
Prepare the Cherry Tomatoes
Halve the cherry tomatoes and toss them with a little olive oil, salt, and pepper. Add them to the baking sheet with asparagus for the last 5 minutes of roasting.
- 8
Finish the Quinoa
Once cooked, fluff the quinoa with a fork and stir in the grated Parmesan cheese. Season with salt and pepper to taste.
