    Prepare the Chicken

    Season the organic chicken breasts with salt and black pepper on both sides. Set aside.

    Chop the Vegetables

    Slice the mushrooms, bell peppers, and chop the onion and garlic. Set aside.

Cooking

    Sear the Chicken

    In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Once hot, add the seasoned chicken breasts and sear for 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the chopped onion and minced garlic. Sauté for about 2 minutes until the onion becomes translucent. Add the sliced mushrooms and bell peppers, cooking for an additional 5 minutes until softened.

    Add the Sauce

    Pour in 1 cup of red wine and scrape any browned bits from the bottom of the skillet. Allow the wine to simmer for 2-3 minutes to reduce slightly. Then add the crushed tomatoes, dried oregano, and stir to combine.

    Combine Chicken and Sauce

    Return the seared chicken breasts to the skillet, spooning some sauce over them. Bring the mixture to a gentle simmer, cover, and cook for 20-25 minutes until the chicken is cooked through and the flavors have melded.

    Once cooked, taste the sauce and adjust seasoning with salt and black pepper as needed. Stir in the fresh basil before serving.
