Method

Preparation

  1. 1

    Roast the Garlic

Preheat the oven to 400°F (200°C). Cut the tops off the garlic cloves to expose the individual cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 30-35 minutes until soft and golden.

  2. 2

    Prepare the Cheeses

While the garlic is roasting, slice the mozzarella cheese into bite-sized pieces. Set aside.

  3. 3

    Prepare the Romaine Lettuce

Wash and dry the romaine lettuce. Cut into bite-sized pieces and arrange them on a serving platter.

  4. 4

    Prepare the Croutons

Place the garlic croutons in a bowl. You can toss them with a little extra olive oil and black pepper if desired.

  5. 5

    Make the Dressing

If using store-bought Parmesan anchovy dressing, give it a good shake. If making homemade, combine Parmesan cheese, anchovy paste, lemon juice, olive oil, salt, and pepper in a bowl and whisk until well combined.

Assembly

  1. 6

    Assemble the Platter

On a large platter, arrange the roasted garlic, Boursin cheese, mozzarella slices, romaine lettuce, and garlic croutons. Drizzle the Parmesan anchovy dressing over the top or serve it on the side.
