Cooking Pasta

    Boil Water

    In a large pot, bring 4 liters of water to a rolling boil. Add salt to taste.

    Cook Bucatini

    Add 400g of bucatini to the boiling water and cook according to package instructions until al dente, usually about 9-10 minutes.

Preparing Sauce

    Prep Cheese

    While the pasta is cooking, finely grate 150g of Grana Padana cheese and set aside.

    Toast Pepper

    In a large pan, toast 2 teaspoons of freshly cracked black pepper over medium heat for about 1-2 minutes until fragrant.

Combining Ingredients

    Mix Pasta and Pepper

    Once the bucatini is cooked, reserve about 1 cup of pasta water, then drain the pasta. Quickly add the drained bucatini to the pan with the toasted black pepper.

    Create Sauce

    Add the grated Grana Padana cheese to the pasta and toss vigorously, adding reserved pasta water a little at a time until a creamy sauce forms, about 1/2 cup or more depending on desired consistency.

Serving

    Plate and Serve

    Serve immediately while hot, garnished with additional grated Grana Padana cheese and more cracked black pepper if desired.
