Classic Cheesecake

    Prepare the Crust

    Preheat the oven to 325°F (163°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and salt. Mix well to form a crumbly mixture. Press this mixture firmly into the bottom of a 9-inch springform pan.

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add granulated sugar, sour cream, and vanilla extract, mixing until well combined. Add in the eggs one at a time, mixing well after each addition.

    Pour the cream cheese mixture over the crust in the springform pan. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool.

    Remove from the oven, let cool at room temperature, and then refrigerate for at least 4 hours or overnight before serving.
