Prepare the Bolognese Filling

    Cook the Meat

    In a large skillet, heat the olive oil over medium heat. Add the ground beef or sausage and cook until browned.

    Add the diced carrot and celery to the skillet. Cook for about 5 minutes until softened.

    Stir in the crushed tomatoes, red wine, Italian seasoning, salt, and pepper. Bring to a simmer and cook for about 20 minutes. Set aside to cool.

Prepare the Rice Mixture

Assemble the Arancini
