Preparation Steps
Prepare the Brussels Sprouts
Trim the ends of the Brussels sprouts and slice them thinly. Set aside.
Cook the Bacon
In a large skillet over medium heat, cook the Nueske’s bacon until crispy. Remove the bacon from the skillet and let it drain on paper towels. Once cooled, crumble the bacon into pieces.
Sauté the Shallots
In the same skillet with the bacon fat, add the thinly sliced shallots and sauté until they are softened and translucent, about 3-4 minutes.
Add Brussels Sprouts
Add the sliced Brussels sprouts to the skillet and toss to combine with the shallots. Cook for about 5-7 minutes, stirring occasionally until the sprouts are tender but still slightly crisp.
Make the Honey-Soy Dressing
In a small bowl, whisk together honey, soy sauce, and the juice from the Meyer lemon. Adjust seasoning with salt and black pepper to taste.
Combine and Serve
Pour the honey-soy dressing over the Brussels sprout mixture and toss to coat evenly. Add the crumbled bacon and mix well. Serve warm.
