Chicken Preparation

Marinate the Chicken

In a bowl, combine buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Fry the Chicken

Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade, letting excess drip off. Dredge in flour, shaking off excess. Fry chicken for 10-12 minutes on each side until golden brown and cooked through. Drain on paper towels.

Waffle Preparation

Make the Waffle Batter

In a mixing bowl, whisk together flour, baking powder, sugar, and salt. In another bowl, beat the eggs and combine with milk and melted butter. Pour wet ingredients into dry ingredients and mix until just combined.

Cook the Waffles

Preheat the waffle iron and lightly grease it. Pour the batter into the waffle iron and cook according to the manufacturer's instructions until golden brown.

Fermented Pumpkin Honey Preparation

Prepare the Fermented Pumpkin Honey

In a bowl, mix pumpkin puree, honey, apple cider vinegar, and salt. Let sit at room temperature for 2-3 days to ferment, stirring occasionally.

Chili Crisp Preparation

Make the Chili Crisp

In a small bowl, combine chili oil, minced garlic, fried shallots, and sesame seeds. Mix well and set aside.

Assembly

Assemble the Dish

Place a waffle on a plate, top with two pieces of fried chicken, drizzle with fermented pumpkin honey, and finish with a spoonful of chili crisp.
