Prepare the Sweet Potatoes

Preheat your oven to 350°F (175°C). Boil the sweet potatoes until tender, about 20 minutes. Drain, peel, and mash them until smooth.

Mix the Filling

In a large mixing bowl, combine the mashed sweet potatoes, brown sugar, granulated sugar, cinnamon, nutmeg, vanilla extract, eggs, and evaporated milk. Mix until well blended.

Fill the Pie Crust

Pour the sweet potato filling into the prepared pie crust, spreading it evenly.

Bake the Pie

Bake in the preheated oven for 45-50 minutes, or until the filling is set and a knife inserted in the center comes out clean.

Prepare the Meringue

While the pie is baking, prepare the meringue. Beat 3 egg whites until soft peaks form. Gradually add 6 tablespoons of granulated sugar, beating until stiff peaks form and the meringue is glossy.

Top the Pie with Meringue

Once the pie is done baking, remove it from the oven and spread the meringue over the hot filling, sealing it to the crust edges.

Torch the Meringue

Use a kitchen torch to lightly brown the meringue, creating a toasted effect. Keep an eye on it to avoid burning.

Serve

Let the pie cool slightly before serving. Drizzle with red apple vinegar for added flavor if desired.
