Method
Fries Preparation
Cut the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch wide, to resemble traditional French fries.
Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make them crispier when cooked.
Dry the Fries
After soaking, drain the fries and pat them dry thoroughly with a clean towel. Moisture can cause the oil to splatter and will prevent the fries from getting crispy.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.
Fry the Potatoes
Carefully add a handful of fries to the hot oil, being cautious of splatters. Fry them in batches for about 4-5 minutes until they are golden brown and crispy.
Drain and Season
Remove the fries with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt and black pepper to taste.
Dipping Sauces Preparation
Prepare the Mayo Dip
In a bowl, mix together the mayonnaise, garlic powder, and chopped fresh parsley until well combined. Set aside.
Prepare the Spicy Ketchup
In another bowl, combine the ketchup and sriracha sauce. Stir until evenly mixed.
Prepare the Dijon Mustard Sauce
In a small bowl, mix the Dijon mustard with a bit of water if necessary to achieve your desired consistency.
