Shrimp Preparation

    Marinate the Shrimp

    In a large bowl, combine the olive oil, garlic powder, paprika, cumin, salt, black pepper, and lime juice. Add the shrimp and toss until well coated. Allow to marinate for at least 20 minutes.

    Preheat the grill to medium-high heat. Thread the marinated shrimp onto skewers. Grill for about 2-3 minutes on each side or until they turn pink and opaque. Remove from grill and set aside.

Guacamole Preparation

    In a medium bowl, mash the ripe avocados with a fork. Stir in the lime juice, salt, chopped cilantro, red onion, and jalapeño (if using) until well combined. Set aside.

Pineapple Habanero Crema Preparation

    In a bowl, mix together the sour cream, crushed pineapple, finely chopped habanero pepper, lime juice, and salt to taste. Stir until smooth and well combined. Adjust seasoning if necessary.

Tropical Pico Preparation

    In a bowl, combine the diced tomatoes, red onion, diced mango, chopped cilantro, lime juice, and salt. Toss gently to combine and set aside.

Assembly

    On a serving platter, create a bed of arugula. Top with grilled shrimp, dollops of guacamole, pineapple habanero crema, and tropical pico. Serve immediately.
