Fried Shrimp

Prepare the Shrimp
In a large bowl, combine the all-purpose flour, cornstarch, salt, and black pepper. Mix well. In another bowl, whisk the egg and water together.

Coat the Shrimp
Dip each shrimp into the egg mixture, then dredge in the flour mixture until thoroughly coated.

Fry the Shrimp
Heat the vegetable oil in a deep skillet over medium-high heat. Once hot, fry the shrimp in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Sriracha Crema

Make the Crema
In a small bowl, combine sour cream, sriracha, and lime juice. Mix until smooth and creamy. Adjust sriracha to taste.
Esquites Corn

Mix the Esquites
Remove from heat and stir in mayonnaise, the juice of the lime, cotija cheese, and chopped cilantro until well combined.
Garnish

Finish the Dish
Plate the fried shrimp and top with esquites corn. Drizzle with sriracha crema and garnish with additional sriracha and cilantro as desired.
