Queso Preparation

Prepare the Peppers
Start by roasting the jalapeño peppers. Preheat your oven to 400°F (200°C). Slice the jalapeños in half, remove the seeds for less heat, and place them cut-side down on a baking sheet. Roast for 15 minutes or until the skin is blistered and charred. Remove from the oven, let cool, then chop finely.

Melt the Cheeses
In a medium saucepan over low heat, combine the white cheddar cheese, Monterey Jack cheese, and cream cheese. Stir continuously until melted and smooth.

Mix in Milk and Spices
Gradually pour in the milk, stirring to combine. Add garlic powder, onion powder, salt, and black pepper. Stir until well mixed.

Add Roasted Peppers
Fold in the chopped roasted red bell peppers and the roasted jalapeños into the cheese mixture. Continue to stir until everything is heated through and well combined.
