Beef Filling

Cilantro Lime Rice

Method

Beef Filling

  1. 1

    Cook the Beef

In a skillet over medium heat, heat the olive oil. Add the ground beef and break it apart with a spatula.

  2. 2

    Season the Beef

Once the beef starts to brown, add chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Stir well to combine and cook until fully browned and cooked through, about 5-7 minutes.

  3. 3

    Drain Excess Fat

If necessary, drain excess fat from the beef and keep it warm until ready to assemble.

Cilantro Lime Rice

  1. 4

    Cook the Rice

In a medium saucepan, bring water to a boil. Add rice and salt, reduce heat to low, cover, and simmer for about 18-20 minutes, or until rice is tender and water is absorbed.

  2. 5

    Add Flavor

Remove the pot from heat, uncover, and let it sit for 5 minutes. Fluff the rice with a fork and stir in lime juice and chopped cilantro.

Salad and Toppings

  1. 6

    Prepare Toppings

While the beef and rice are cooking, chop the romaine lettuce, slice the jalapeño, and prepare the tomatillo crema, pico de gallo, and white queso.

Assemble the Gringo

  1. 7

    Layer Ingredients

In a large bowl or plate, layer the cilantro lime rice, seasoned ground beef, chopped romaine, sliced jalapeño, pico de gallo, a drizzle of tomatillo crema, and white queso.

  2. 8

    Garnish

Sprinkle fresh cilantro on top for garnish. Serve immediately.
