Fried Avocado

    Prepare the Avocados

    Cut the avocados in half, remove the pit, and scoop out the flesh. Cut the flesh into thick slices.

    Set Up Breading Station

    In three separate bowls, place the flour mixed with salt and pepper in the first bowl, whisk the egg with milk in the second bowl, and place the breadcrumbs in the third bowl.

    Bread the Avocado

    Coat each avocado slice first in the flour mixture, then dip it into the egg mixture, and finally coat it with breadcrumbs. Ensure each piece is well coated.

    Fry the Avocado

    In a large frying pan, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded avocado slices in batches, frying until golden brown on both sides (about 2-3 minutes per side). Transfer to a paper towel-lined plate to drain excess oil.

Adobo Crema

    In a small bowl, combine sour cream, adobo sauce, lime juice, and garlic powder. Mix well until smooth and creamy.

Pico de Gallo

    Chop Ingredients

    Dice the tomatoes and red onion. Finely chop the cilantro.

    Combine and Season

    In a bowl, mix the chopped tomatoes, red onion, and cilantro. Add lime juice and salt, and toss to combine.

Assembly

    Prepare Romaine

    Wash and tear the romaine lettuce into bite-sized pieces.

    On a plate, layer the romaine, top with fried avocado slices, drizzle with adobo crema, and add a generous amount of pico de gallo on top.
