    Cook the Corn

    In a large skillet over medium heat, melt the butter. Add the fresh corn kernels and sauté for about 5-7 minutes until the corn is tender and slightly caramelized.

    Combine Ingredients

    In a large mixing bowl, combine the sautéed corn, mayonnaise, Cotija cheese, chopped cilantro, lime juice, chili powder, and salt. Mix well until all ingredients are evenly distributed.

Tortilla Chips Preparation

    Prepare the Oil

    In a large pot or deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Tortilla Chips

    Cut each corn tortilla into triangles. Carefully add the tortilla pieces to the hot oil in batches, frying for about 2-3 minutes or until golden and crispy. Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Season with salt immediately.
