Chorizo Picadillo

    Prepare the Ingredients

    Peel and dice the potatoes into small cubes. Chop the cilantro and set aside. Rinse the rice under cold water until the water runs clear.

    Cook the Potatoes

    In a large skillet, heat the vegetable oil over medium heat. Add the cubed potatoes and season with salt and pepper. Fry until golden brown and crispy, about 10-12 minutes. Remove from the skillet and drain on paper towels.

    Cook the Chorizo

    In the same skillet, add the chorizo and cook over medium heat until it is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.

    Cook the Rice

    In a small pot, combine the rinsed rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed. Remove from heat and fluff with a fork.

    Make Ancho Honey Crema

    In a small bowl, mix honey, ancho chili powder, and a pinch of salt. Stir until smooth and set aside.

Pico de Gallo

    Combine Ingredients

    Chop the tomato, onion, and cilantro finely. Add to a medium bowl.

    Dress the Pico de Gallo

    Squeeze the juice of the lime over the chopped ingredients and season with salt to taste. Mix well and let sit for about 10 minutes to allow flavors to meld.
