Steak Preparation

    Marinate the Steak

    In a bowl, combine olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper. Add the flank steak and coat well. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Grill the Steak

    Preheat your grill to medium-high heat. Remove the steak from the marinade and let excess marinade drip off. Grill the steak for about 5-7 minutes per side for medium-rare, or until desired doneness. Remove from the grill and let it rest for 5 minutes before slicing against the grain.

    Prepare the Vegetables

    While the steak is marinating, slice the bell peppers and onion into strips.

    Toss the sliced peppers and onion with olive oil, salt, and black pepper. Place them on the grill alongside the steak for about 5-7 minutes, turning occasionally until tender and slightly charred.

Chimichurri Sauce

    In a bowl, combine chopped parsley, cilantro, minced garlic, red wine vinegar, olive oil, salt, and red pepper flakes. Mix well and let it sit for at least 15 minutes to allow the flavors to meld.

    Slice the rested steak against the grain and serve it on a platter with the grilled peppers and onions. Drizzle with chimichurri sauce and sprinkle crumbled cotija cheese on top.
