    Prepare the Chicken

    In a large bowl, combine garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper. Rub this spice mixture onto the chicken thighs evenly.

    Cook the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken thighs and cook for about 6-7 minutes on each side, until golden brown and cooked through. Remove from skillet and set aside.

Cilantro Lime Rice

    Cook the Rice

    In a medium pot, combine the long-grain white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until water is absorbed and rice is tender.

    Season the Rice

    Remove the pot from heat, and fluff the rice with a fork. Stir in chopped cilantro, lime juice, and salt. Cover to keep warm.

White Queso

    Prepare the Queso

    In a saucepan over medium heat, combine shredded white cheddar cheese, milk, cream cheese, diced jalapeño, and minced garlic. Stir continuously until the cheeses are melted and the mixture is smooth.

Vegetables

    Sauté the Vegetables

    In the same skillet used for the chicken, add the sliced mixed bell peppers and onion. Sauté over medium heat until softened, about 5-7 minutes.

    Fry the Jalapeños

    In a small pan, heat oil over medium heat. Carefully add the whole jalapeños and fry until the skin is blistered and darkened, about 5 minutes. Remove and drain on paper towels.

Assembly

    On a serving plate, start by placing a bed of cilantro lime rice. Top with the cooked chicken thighs, sautéed vegetables, and drizzle with white queso. Garnish with whole fried jalapeños and fresh cilantro.

    Serve the dish with warm flour tortillas on the side for wrapping.
