Method
Ahi Tuna

Prepare the Tuna
Pat the ahi tuna steaks dry with paper towels. Rub both sides with olive oil, salt, and black pepper. Sprinkle sesame seeds on both sides.

Sear the Tuna
Heat a non-stick skillet over high heat. Once hot, add the tuna steaks and sear for about 1-2 minutes on each side for rare, or longer if desired. Remove from heat and let rest.

Prepare the Adobo Crema
In a small bowl, combine the sour cream and adobo sauce. Mix well until smooth. Adjust the seasoning if necessary.
Mango Salsa

Prepare Mango Salsa
In a bowl, combine diced mango, red bell pepper, lime juice, and salt. Toss gently to combine and set aside.
Red Cabbage Slaw

Make the Slaw
In a large bowl, combine shredded red cabbage and carrots. In a separate small bowl, whisk together rice vinegar, olive oil, salt, and pepper. Pour the dressing over the cabbage and carrots, and toss well to combine.
