Preparing Pickled Red Onion

Pickle the Onions
Slice the red onion thinly and place it in a jar. In a small saucepan, heat apple cider vinegar, sugar, and salt until dissolved. Pour the mixture over the onions and let them sit for at least 30 minutes.
Making Guacamole

Prepare the Guacamole
In a bowl, mash the ripe avocados. Stir in lime juice, salt, diced tomatoes, chopped cilantro, and diced red onion. Mix until well combined and set aside.
Making Mango Salsa

Prepare the Mango Salsa
Peel and dice the mango and red bell pepper. In a bowl, combine the diced mango, red bell pepper, lime juice, and chopped cilantro. Mix well and set aside.
Cooking White Rice

Sear the Ahi Tuna
Season both sides of the Ahi tuna filets with salt and pepper. Heat a skillet over medium-high heat and add a splash of oil. Sear the tuna for 1-2 minutes on each side for rare, or longer if desired. Remove from heat and slice into thin strips.
Making Adobo Crema

In a small bowl, mix together sour cream and adobo sauce until smooth. Adjust to taste.
