Base Sauce

    In a medium saucepan, combine 2 cups ketchup, 3 tablespoons tomato paste, 1 cup apple cider vinegar, 1 cup water, and 1 cup packed brown sugar. Whisk until smooth to dissolve large sugar lumps.

    Bring the mixture to a gentle simmer over medium heat, stirring frequently so the sugar fully dissolves and the tomato paste incorporates evenly.

Aromatics & Seasoning

    Sauté aromatics

    While the base comes to a simmer, heat a small skillet over medium heat with no more than 1 teaspoon neutral oil (optional). Add 1/2 cup finely minced yellow onion and sauté 4–5 minutes until translucent and starting to caramelize, stirring often to avoid burning.

    Add 3 cloves minced garlic to the onions and cook 30–45 seconds until fragrant. Transfer the softened aromatics into the simmering saucepan.

    Stir in 1 tablespoon Dijon mustard, 1 tablespoon Worcestershire sauce, 1 teaspoon soy sauce, 1 tablespoon molasses, 1 teaspoon kosher salt, and 1/2 teaspoon freshly ground black pepper into the saucepan. Whisk to combine.

    Reduce heat to low and let the sauce simmer gently, uncovered, for 20–25 minutes, stirring every 3–5 minutes to prevent sticking. The sauce should thicken and deepen in color.

    After simmering, remove the saucepan from heat. Stir in 1 tablespoon fresh lemon juice and 1 tablespoon honey. Taste and adjust: add up to 1/2 teaspoon more salt, more honey for sweetness, or more hot sauce for heat.
