Prepare Spread & Avocado

    Make lemon mayo

    In a small bowl combine the mayonnaise, lemon juice, olive oil, salt, black pepper and red pepper flakes. Stir until smooth and set aside.

    Prep avocado

    Halve and pit the avocado. Scoop out half (about 1/2 avocado) into a bowl. Mash lightly with a fork so some small chunks remain. Taste and adjust with a tiny pinch more salt or a few drops of lemon if needed.

Assemble Sandwich

    Toast bread (optional)

    If you prefer a warm toasted sandwich, heat a skillet over medium. Lightly butter or brush both bread slices with the butter/olive oil (0.5 tbsp total). Toast in the skillet 1–2 minutes per side until golden and slightly crisp. Remove and place on a cutting board. If not toasting, proceed with untoasted slices.

    Spread

    Spread half of the lemon-mayo on one slice of bread and half on the other slice. On one slice, spread the mashed avocado evenly over the mayo layer.

    Layer ingredients

    On the avocado-covered slice, arrange the provolone slices so they cover the avocado. Add the tomato slices in a single layer on top of the cheese, then the red onion slices, and the baby spinach. Finish with the sprouts evenly distributed.

    Close and press

    Place the second slice of bread mayo-side down on top of the sprouts. Press gently to compact the sandwich and help layers adhere.

    Slice and serve

    Using a sharp knife, cut the sandwich in half diagonally or down the middle. Serve immediately. If you toasted the bread and want melted cheese, return the whole sandwich to the skillet over low heat for 1–2 minutes per side, pressing lightly, until the provolone warms and softens.
