Prepare Cucumbers

Wash and trim
Wash the cucumbers thoroughly under cold running water to remove dirt and wax. Trim off both ends (about 1/8–1/4 inch) to remove any bitter blossom end.

Cut into spears
Cut each cucumber in half lengthwise, then cut each half into 2 spears (for medium cucumbers) or 3 spears for thinner spears. Aim for 24 spears total. If cucumbers are large, adjust to yield 24 similar-sized spears.

Optional salting (crisper texture)
If you prefer extra-crisp spears, place the cut spears in a colander, sprinkle with 1 teaspoon kosher salt, toss, and let drain for 30 minutes. Rinse briefly with cold water and pat dry with paper towels before pickling.
Make Brine

Combine the white vinegar, water, granulated sugar, and kosher salt in a medium saucepan. Stir to dissolve the sugar and salt.

Add the pickling spice, smashed garlic cloves, black peppercorns, dill seeds or fresh dill heads, and red pepper flakes (if using) to the saucepan.

Bring the mixture to a gentle boil over medium-high heat, then reduce heat and simmer for 2 minutes to bloom the spices and fully dissolve solids.

Remove the saucepan from heat and let the brine cool for 3–5 minutes off the heat (it should still be hot but not boiling when poured).
Pack & Pour

Place the cucumber spears snugly in a clean, heatproof jar or container that holds roughly 1.5–2 quarts (a large mason jar or airtight container). Arrange the garlic and any whole dill heads or visible pickling spices among the spears so flavor distributes evenly.

If necessary, weigh the spears down with a small piece of folded parchment or a clean small weight so they remain submerged in the brine.
Cool, Chill, and Serve

Let the jar cool at room temperature for 30 minutes, then cover and transfer to the refrigerator.

For best flavor, refrigerate at least 4 hours before serving. Quick pickles are ready sooner but develop more flavor after 24 hours. The spears will keep well refrigerated for up to 4 weeks; always use a clean fork when removing.

If you want to speed cooling to serve the same day, place the sealed jar in an ice bath (ice and water) for 10–15 minutes to bring the temperature down quickly before refrigerating.
