    Prepare banana base

    Peel the ripe banana and place it on a cutting board. Using a fork, mash the banana in a medium bowl until mostly smooth with a few small chunks remaining for texture (about 20–30 seconds).

    Mix in peanut butter and honey

    Add 3 tablespoons of smooth peanut butter and 2 teaspoons of honey to the mashed banana. Stir vigorously until the mixture is well combined and creamy. If you prefer a silkier texture, add 2 tablespoons of plain Greek yogurt and stir until incorporated.

    Add binders and flavor

    Stir in 2 tablespoons of rolled oats, 1 teaspoon vanilla extract (if using), and a pinch of kosher salt. The oats give a little chew and help the mixture hold shape. Taste and adjust honey or salt as desired.

    Form snarflettes

    If you want snack-sized patties, scoop roughly 2 tablespoons of the mixture per snarflette and shape into small rounds with your hands or the back of a spoon. This recipe yields about 4–6 snarflettes depending on size.

    Optional warm sear

    Heat a nonstick skillet over medium-low and add 1 teaspoon butter or neutral oil. When hot, add the formed snarflettes and cook 1–1½ minutes per side just to warm and slightly caramelize the exterior — handle gently so they don’t fall apart. Remove to a plate.

    Finish and serve

    Drizzle each snarflette with a touch more honey (about ¼ teaspoon each) and sprinkle with chopped peanuts or chopped dark chocolate (about 1 tablespoon total) for crunch and contrast. Serve immediately while warm, or refrigerate for a firmer, chill snack.
