Prepare bread and spread
Bring butter to room temperature so it's spreadable (or soften briefly in microwave for 5–8 seconds). On the inside face of two bread slices spread 1 tsp mayonnaise each. On the other two slices spread 1/2 tsp Dijon mustard each. The mayonnaise and mustard add flavor and help create a golden crust.

Assemble cheeses and optional fillings
On one mustard-spread slice layer 2 slices sharp cheddar and 1 slice Gruyère, distributing cheese to cover most of the bread but leaving a small border. If using tomato, place 2–3 thin tomato slices on top of the cheese, pat tomato dry first to avoid sogginess. If using baby spinach, lightly layer the spinach over the cheese. Top with the second bread slice (mayonnaise side in).

Grill first side
Place the sandwich in the pan, buttered side down. Press gently with a spatula to ensure even contact. Cook for 3–4 minutes until the bread is golden brown and crisp. Keep heat moderate—if bread browns too quickly, reduce to low.

Flip and finish
Carefully flip the sandwich using a spatula. Butter the new top side immediately with the remaining butter (about 1/2 tbs). Continue cooking 3–4 minutes more, pressing occasionally, until the second side is golden and the cheese is fully melted. If the cheese hasn't melted after 4 minutes, cover the pan with a lid for 1–2 minutes to trap heat and finish melting.

Rest and slice
Remove the sandwich to a cutting board and let rest 1 minute to allow the cheese to settle slightly. Slice diagonally or down the middle, wiping the knife between cuts if cheese strands pull.

Season and serve
Sprinkle a tiny additional crack of black pepper if desired and serve immediately while hot with your favorite dipping side (tomato soup, pickles, or chips). Repeat the process for the second sandwich using the remaining ingredients.
