Base Sparkling Fountain

Method

Base Sparkling Fountain

  1. 1

Make simple syrup (if not using store-bought)

Combine 1/2 cup granulated sugar and 1/2 cup water in a small saucepan. Warm over medium heat, stirring until the sugar dissolves completely. Remove from heat and cool to room temperature. Refrigerate if not using immediately.

  2. 2

In a large pitcher or beverage dispenser (about 2–3 quart capacity), pour the chilled sparkling water, fresh orange juice, fresh lemon juice, and 1/2 cup simple syrup. Stir gently to combine, taking care not to flatten the sparkling water too much. If you prefer a lighter sweetness, start with 1/3 cup syrup and adjust to taste.

  3. 3

Taste the mixture and adjust balance: add more lemon juice for brightness, orange juice for body, or simple syrup for sweetness. If using ginger syrup or grated ginger, stir it in now to infuse a gentle spicy note.

  4. 4

If using fruit liqueur for an adult version, add it now and stir gently to integrate.

  5. 5

Just before serving, add the additional 1 cup plain seltzer (or more to taste) to top up the carbonation and create a lively fountain effect in the dispenser. Stir very gently.

Fruit & Garnish

  1. 6

Thinly slice the orange, lemon, and lime. Lightly bruise the mint leaves by clapping them between your hands or gently muddling once in a spoon to release aroma (do not pulverize).

  2. 7

Add the sliced citrus, bruised mint leaves, and frozen berries into the pitcher or dispenser. Distribute fruit evenly so every pour has some garnish. Leave a few slices and mint sprigs aside for individual glasses.

  3. 8

If you want the fruit to infuse more flavor, let the assembled fountain rest in the refrigerator for 30–60 minutes before topping with the final seltzer; otherwise serve immediately.

Assembly & Serving

  1. 9

Fill glasses halfway with ice cubes (if using). Pour the fountain beverage into each glass, making sure to include some fruit and a mint leaf in each pour.

  2. 10

Garnish each glass with a reserved citrus slice and a mint sprig. For an extra touch, rim glasses with sugar or a mix of sugar and finely grated citrus zest before pouring.

  3. 11

Serve immediately, encouraging guests to stir gently before sipping to redistribute fruit and mint. Leftovers: keep chilled in the refrigerator without extra seltzer; add fresh seltzer just before serving again to restore effervescence.
